Workbench setup

I have a series of more than a hundred wooden boxes dimension 30cm x 40cm x 20cm on top of the box l need to engrave various text. Does anyone have any idea how to setup Workbench? In fact, I need such a workbench, which will be adjustable in height. Any solution?

I have been thinking about how to extend the Z axis to be able to work on thicker stock. And I came up with this idea. By mounting the waste board on the bottom of the rail instead of on top you increase the max work thickness by 20mm (the thickness of the rail) Though this does not increase the possible carving area on the thicker stock.
