Noob origin offset help needed

I am new to this and I am attempting to just make the process easier on myself so i don’t have to relearn this unit every time i go to use it. I don’t have knowledge of all the nomenclature and I don’t really have time to dedicate to the process of reading everything under the sun to figure out the correct way to describe things so here is the summary of where i am.

I created a consumable bed out of some teak cutting board material. I created a tray pocket to allow me to consistently place 2 color hdpe stock in the exact same position. I also have a second pocket adjacent to it to allow a place for a sample for setting z height. This allows me to place anything there i need to and measure the 0 point. If i use aluminum for my logo plate i use the auto zero function in GRBL. If i am using the HDPE i manually lower the z axis until it touches and then zero it. That all work fine and i get good results.

The problem is that I have an offset now for the pocket. If i have something i want to engrave i need to remember to select all and adjust the offset over and back around an inch. It should be an inch but it is like .98".

What i would like to do is just have an offset of x and y that i can set permanently in the setup so i don’t forget. I have the math all done on the normal information tags because they have a 4 hour cut time. When i want to make a quick item like a door tag for the fedex guy for example, i have to remember to put the offset or i run off the edge of the tray.

I feel like this should be an easy thing to add.
